As a mother of two young girls and a student of nutritional therapy, I need food that is healthy, tasty and simple. My intention is to create tasty recipes from healing ingredients mixed with the latest nutritional science. Kale & Cake is about sharing this personal journey with you.
Over the last few years I have dealt with several food intolerances. Consequently, I just did not “feel right”. I had 10 years of muscular pain, fatigue, and digestive issues. After my first child, my stress levels hit the roof and my symptoms intensified, so I decided to dig deeper to find the underlying causes.
I tried it all: wheat-free, gluten-free, dairy-free, yeast-free. All fun-free and without results! The eureka moment was receiving the results of a food intolerance test. I was intolerant to dairy, yeast and …eggs! Eggs had been one of the staple foods throughout my fun-free crusade. After just three days without the allergens, I felt like a new me!
With such a profound effect on my own life, I revamped my career and decided to become a nutritional therapist through the Institute for Optimum Nutrition. And here I am, sharing my new found knowledge, love and passion for health-giving food with you.
